It seems the consensus is keep the tiagra groupset and save my money
Pretty much. If it's all new, I'd leave as is. Anything that breaks/wears out on my bikes gets replaced with 105 as a general rule as I find it's the optimum point in terms of cost versus quality and lifespan but it's only when it needs replacing.

Plus one to @Smoking Joe's sentiment, if you feel you need to follow Petronius' maxim re change. The Tiagra STIs will have a decent resale value eg £40+.

It's only a good idea if you can't live with the idea of exposed cables. It will make no actual difference to your riding, other than from an aesthetic point if view...

if changing shifters is a good idea what would you suggest

If you feel the need to change @mikeruss , plenty of 105 10sp STI (5600) on the bay. Or source from other cycling sites/fora. Other folks are 'upgrading' to 11sp so have to move their current/old 10sp STIs on. Maybe more supply after presents have been opened.

Does anyone know of a "universal chart" that can list all current groupsets, in order of price, and showing a very short...like 5 word...explanation of the difference between it and the next in the list.

I cant fathom the spectrum of groupsets available from all the manufacturers and suspect that there really isn't that much between them, except weight.

Think this just about stays on topic (certainly in the spirit of its title).

Search "shimano campagnolo comparison" and take your pick of the hits, although your yearning for a "like (sic) 5 word . . . explanation" is unlikely to be satisfied and suggests your patience will be tested.
Speeds, quality, very limited sophistication, lightness all increase as the prices go up, but the increases are not linear (ie graphed against price) and often d/d£ = 0.
