As I have stated before - using anti seize - assembly grease - any grease and also Vaseline will change the Coefficient of Friction - therefore changing the Torque values. All Torques stated are for dry threads and dry conditions - allowances have to be made for the different lubrication added - and tightening torques will usually be reduced - if tightened to the stated torque with any lubrication the torque will be much greater.
So is there a science to this? The stem I am using to replace the current one says 6nm, if I used an snti seize paste, how would I gauge this?

Similarly how do I know what the materials of bolt, thread etc. are, as I guess it won't just be the stem when I put the headset back together too.

I'm unconvinced the torque values need to be changed by that much.
6nm is 6 newtons at a distance of 1 mtr, so about 10kgf at the end of a regular small allen key~ about as tight as you can get it with your fingers without hurting them, no leaning your weight over it.

On another point, what about grip paste? A GCN video I watched said to use it, but wasn't clear if that was exclusive for carbon as the only product I can see is for carbon components, which my stem and bars aren't.

Vaseline works fine in all my bike lube applications ...
Thanks for your vaseline recommendation fab foodie. Recently gave the brommie a big clean up and used vaseline instead of the grease i would normally use on hinges etc definitely a good move. I don't think i'd use it on bearings or the like but for nuts and bolts etc it seems ideal. And of course very nice to work with. No need to wear thin gloves etc.

I use lanoline for waterproofing derailleur cables. Have tried it for the headset bottom bearing but it stiffens up in cold weather.
