Finally got my work stand and have the bike on it now, with a view to sorting the gears out.
The gears aren't changing properly so what should I have them in to start off with....smallest ring on front and back?

I know someone posted a you tube thing but I can't find it from my tab.
Arrgg!

if they did work properly and now they don't, the first thing to check for is cable stretch.
start with the chain in the smallest sprocket and try and move up one gear - if it doesn't do anything titghten the cablea bit by turning the thumb adjuster screw on the rear mech

The gears were okay but then it wouldn't drop to the lowest gears. I did fiddle with them by turning the adjuster but I think I have properly screwed it as it's got worse since I did that.

It says to drop the gears down to the smallest ring....
Mine won't go. I moved the shifters, turned the pedals and it's staying here...

Excuse the crud...I didn't clean it last night and was going to after I had looked at the gears today.

To sort the rear...
Unclamp the inner shifter cable at the derailleur and wind in the derailleur adjusters all the way in. Now pull it finger tight and clamp it.
Put in big chain ring.
Set the high limit screw.
Then increase the tension in the cable by turning the tension adjuster on the rear derailleur clockwise, unitll it shifts up the cassette with no hang ups.
Now shift down the cassette. If it hangs up anywhere, reduce the cable tension slightly.
Now shift the front into the smallest chain ring and set the low limit screw.
All done.

Pretty much the same principles for the front. But remember to set the limit screws in the big ring with the small cassette cog and small ring with the big casstte cog.

I used to try and sort my gears by watching youtube but for the shimano gears that I have, I found the Shimano manual best as it takes you through step by step in correct sequence. They can usually be downloaded as PDFs and are sorted by the derailleur model number. For example: http://si.shimano.com/# and then for Deore XT, http://si.shimano.com/#seriesList/72 and then for the rear derailleur RD T780.

The section usually of interest is the Adjustment Section and the low and high adjustments and the SIS adjustment (indexing)

Your top and low adjustments are to stop the chain dropping off. Lots of people attempt to adjust the indexing this way but, it rarely works. Getting the indexing to work requires that the position of the derailleur is correct, the chain tension is within limits and that the cable tension is correct. If you set the high and low positions corrcetly but it doesn't go up and down smoothly, it's much more likely to be cable tension or the derailleur is slightly out of position. Messing with the high and low just makes things worse.

AARRGGHHHHH!!!!!!!
Frustrated isn't the word.
I followed the instructions, but the damn gears are as bad as ever! Some change smoothly and others (the higher up you go) just jump about and when pedalling they change of their own accord as well!
Guess it's going in to the LBS now as I can't seem to do this and tbh, I don't know what I'm doing!
