The Edge Touring uses the OSM maps so my guess would be that if it's not on OSM it won't be on the Touring. I only ride on the road unfortunately so this is just a guess.

How much does the standard map show? Will it show bridleways for example? Many parts of the route make use of them and the OSM-Cycle map on RWGPS does not show all of the ones that the proper OS maps show.
There are a few OSM maps online that have tracks, paths and bridleways etc shown and are routable but probably not all of them, especially dedicated to MTB and off road riding etc, I only have one link to one which I installed on my 800 which I soon took off as I avoid them like the plague as they can totally mess a route/course up if you predominantly ride on road but I have come across more than this one:-
