it's not Lancashire

Indeed not. Lancashire has its cheese, and no doubt a cave or two, but I'd be looking for somewhere with a much stronger association to both.

I'll leave this rowling along for now...

We're close to somewhere which has a strong association with caves and cheese.

The location is elevated and there's a view through a valley towards some lower ground. Here's that view in different light, enlarged as much as I reasonably can:

There's a seemingly random clue in one of the filenames, which you won't have failed to notice, put there in case I should need it later. Find the commonality between this and the deliberate mis-spelling of rolling and you have something central to solving this case.
