Careful - you need 16gm ones for a road tyre (full release will take a tyre up to 130psi).
8gm cartidges wont get your tyre up to full pressure. You really need 16gm

Do co2 adapters with pressure gauges exist?

I havent seen any. If I use the co2 I do it in quick bursts and not all in one go then you can get an idea of pressure as you go.
