I’ll add one of my favourite (and well-known) combos:

Chili Con Carne with a few good chunks of dark chocolate melted in during cooking.

That's an old one, and used in Mexican regional cooking.

You don't actually taste the chocolate, but it adds a deep richness to the sauce.
