A 'general run around' sounds good using either 'North Road' or these handlebars,

Ergotec 'Toulouse'.

Then stick a new single ring 'Stronglight' crank on and a 'period' 5spd rear mech so you end up with something similar to this (my latest project rebuild)

I nearly stuck a rear derailleur on this (using a 'universal hanger' but stayed with the SA 3spd hub) and had the wheels handbuilt, converting to 700c from 26"x1 3/8" (fractionally bigger) but it's easy to go the other way from 27" to 700c (fractionally smaller)

NOOOOOOO!

That's not quite my thing Raleighnut, but it does give me some ideas.
