How long will it take Wiebes to get another 100? (When) will she be considered the greatest sprinter in cycling even ahead of Cavendish and Cipollini?

Fewer career wins than either so far, even before you run into the age-old problem of comparing people in different eras and against different riders. Also sadly has fewer marquee events at which to make her argument.

Greatness is about how somebody makes you feel though - I dare say there are people out there who already feel that she's the best thing since sliced bread, and fair play to them.

That’s a definite no.
Way more to being the greatest sprinter ever than simply number of wins.

I don't think she is close yet, but I think she has a shot at such a title if she keeps this level of winning up for most of her career. She is currently dominant in the way Cavendish or Cipollini were in their prime; albeit against lesser competition, but that's not her fault, but does still factor in.

It's very impressive when she launches and does seem like a complete sprinter as well.

I may be wrong but from my watching of women's racing it feels like the vast majority are won by all-rounders with very few specialists (maybe specialist time triallists but not many out and out climbers or sprinters) so when there are races with full on bunch sprints there isn't a huge field of contenders.
