Why buy an MTB for canal towpaths? Serious overkill.

IMHO, ditch this MTB theme and look at either cyclocross bikes or road bikes with clearance and provisions for guards.

+1 for cross bike. You'll be amazed at quite how far off-road a cross bike will go. And be all round faster than MTB 90% of the time too.

I agree with the above, some kinda half road, half MTB would be the best for what you are looking to do, the slightly thinner tyres make all the difference

Hello? Look at the spec of the Cube he links to. It's got 700c wheels, and very short travel telescopic forks. It's possibly the perfect tool for taking off road onto bridleways, fire roads and towpaths.

It is, by the way, NOT a mountainbike.

It isn't a mountain bike, it's a trekking bike. Europeans love this sort of thing for long treks over fire roads, bridleways and so on.

Its more mountain bike than it is road bike (geometry wise etc). Considering that it will be mostly used on the road, something that is primarily a road bike would be a better purchase imo.

edit: BTW I hold my hands up to being wrong about the initial impression, I clicked the links hastily, saw the images for 2-3 of them and thought they were MTB's since they look very much MTB-ish, I didnt read the text in my haste etc. But I stand by my 1st comment re a cyclocross bike or a road bike with clearence for wider tyres and guards might be the better choice.
