To be honest, Mark, You would be much better off buying a really good pair of wheels, because out on the road you'll not notice the difference in shifting between 105 and Ultegra.

Shimano RS80, Easton EA90 or American Classic Victory 30s (or the Aero 420s for a bit more) would be my choices in that range. There's lots of others at that price...
