It's a bugger really, as the levers I've bought to upgrade Mrs Monkey's bike are for v brakes, and the bike currently has Cantis on it.

By the time you've bought all the parts separately, you may find its not a lot more expensive to buy a new bike designed with straight bars.
Seriously, you could spend £100 or more on bars, levers, shifters, cables etc, £300 for premium parts if you push the boat out a bit.

Having once ridden a drop to flat bar conversion with V-Brake levers on caliper brakes I know it is not nice - far too "grabby"; so when I did a conversion recently (aiming for minimum cost) - it was all bits off e-bay, except the brake levers. I bought these, works fine.

i've altered your sentence (below) so that it makes sense:becool:

the main issue is caliper brakes only needing half the amount of pull that flat bar V or disc levers need.

consequently, make sure you don't use v-brake levers, but buy road bike flat bar brake levers. they're available from your LBS, s/h for a few quid
