I'd cut the beef into thin strips rather than cubes then just cook as normal.
Meat is murder. Just sayin'.
Heston did one recipe in the In Search Of Perfection series where he soaked some Short Ribs in brine overnight, fried them in a hot pan and then braised for 5 hours with hot chilli oil etc

That is how to make chilli1kg Good quality stewing steak, shin if possible, cut in to nice chunks. Brown in casserole pan on hob. Remove, fry 2 sliced onions and a couple of crushed cloves of garlic.
Add 1tsp of cumin, coriander, paprika and 1 cinnamon stick. 1 or 2 tsp of chilli powder depending how hot you like it. Cook the spices for a minute or so then add 2 tins of tomatoes, a good squirt of tomato purée and 250ml beef stock.
Add the beef and a tin of kidney beans and I also add a sliced fresh chilli or a dried habanero chilli
Cover and cook in the oven on 160c for 4 hours
Stir every hour or so and you might have to top up with a splash of water.

Got some people round for drinks for my birthday in a couple of weeks and I want to put a big pot of chilli out for people to help themselves, but I'd like to use really slow-cooked beef and mash it all up instead of using mince.
I googled a couple of recipes but they look slightly on the poncy side (especially Jamie Oliver's "throw half a litre of coffee in" one).
