forgot to add: I take the cleats off my MTB shoes about once a month, slather the bolts with marine grease and put them back in. Twice I have had to drill out seized bolts from the shoes, and have also lost bolts mid-ride, and them countersunk Allen cleat bolts cannot be bought by themselves AFAIK but only as part of a replacement cleat set (£10 or so).
