Gabriela Quintero of Rodrigo y Gabriela is my favourite by far. The sounds she can get out of an acoustic guitar are amazing. Part guitar, part drum, part I don't know what.
Unfortunately almost all videos of her solos have been filmed by audience members and have audio quality issues as a result.
In pure technical ability, you'll struggle to find anyone who beats this:
Since we've opened up the four-string variant, I'm going for Tina Weymouth of the Talking Heads. I bought a Hofner Senator like the one she had because it's a hollow body and therefore lighter so allows me to play it for much longer without the awful back pain I get with solid-bodied, heavier basses. A Hofner violin-shape one was out of the question as I'm right handed before anyone asks.
