Ah, but start at the bar ends....... if you use cork ribbon then this is important - the plastic stuff doesn't matter - why, because your natural pressure when using the tops etc will make the cork stuff edges curl and become tatty if centre-out wound.
You don't need to do the figure of 8 , but winding takes practice. Use the lever clamp bit to cover that, start winding from the bar end, then just practice getting a good cover over the lever area.... soon becomes easy - 20 odd years doing it.... anyone want to pay me a fortune for a masterclass....
BTW cork stuff is the best - if it's an every day bike, get the black stuff, but even the light coloured stuff scrubs up nice -far more comfy than the plastic stuff, grippier and 'easier' to clean.
