I understand that in order to fit 3 sprockets and 2 spacers where 2 sprockets and one spacer were previously requires 11 speed components - will 10 speed fit ok, or do i need 11 speed sprockets and spacers with a 10 speed chain?

As I said before: I did use a 10 speed cassette and a 10 speed chain. Absolutely no issue. See https://www.bikeforums.net/20170010-post8.html

Also Duncan, who invented this hack initially back in 2014, did use 10 speed sprockets. I did mention and link a post with his documentation also earlier in this thread: https://www.evernote.com/shard/s3/sh/4bae9f26-2252-4be9-8229-314d0a13c754/3118242aa4dcc174f4c493cf5828165e/res/133a58c6-bd38-46f2-8a6a-ec61dcdaafe7/2 to 3 Speed.pdf

So no idea where you get the 11-speed thingy from.

Update...... I chatted with a friend yesterday who is about to remove his 11 speed cassette and is donating it to my experiment.

That's when you use 11 soeed kit for tinkering. When it's free!
10 speed chains and cassettes are cheaper than 11 speed.

Yes indeed. I've measured the chainring teeth width 2.5mm! so no chance even a 10 speed chain will fit. For one extra sprocket I'll have to wait until the chainset wears out (it's a 2007 model) before I pay out for a new chainset, chainring etc, so unless I win the lottery I'll probably give an update in about 10 years.
