A bike is fairly low tech and (mostly) low stress so you don't really have to be too precious about exactly which oil or grease to use, I am a believer in grease for bearings, oil for chains, and anti-seize for pedals.

Whilst you can use grease for pedals, and it's better than nothing, a tube of proper anti seize (coppaslip being a common brand) is maybe a fiver and contains enough to last a lifetime, so it's hardly worth skimping in my view. Don't use coppaslip instead of grease as have heard suggested on here - I dare say it's better than nothing but it's still the wrong stuff

I use copper slip (grease). I bought a small tub many years ago and it is still 3/4 full despite maintaining 4 bikes. I also put a bit on the back of brake pads to stop them from squealing.
I also have some Cobas high temperature anti-sieze compound that is good to 1200 DegC, which has saved me many hours and bruised knuckles and snapped studs when working on exhaust bolts on cars / motorbikes. We use it on our gas turbine hot bits at work, so I knew it was good stuff.

Hopefully the headset cups were installed into your Ti frame using anti-seize or they will probably be difficult to remove. Sometimes, you have just got to trust the bike shop to do the job right.
They've been in there nine years. A nice Chris King headset. I'm not planning on removing it anytime soon so not really worried about it.
