Out on the Mtb today and with no warning the seat bolt sheared and the seat fell off. Fortunately I was only doing 1 mph and the seat pack strapping stopped the seat falling off instantly.

It could have been nasty!
 
Glad it wasn't too bad.

Touch wood whenever something has went wrong with my bike, I've been cycling uphill and speeds have been low too.

A lucky escape!

I had that happen to me on my road bike about 15 years ago, only the saddle fell off straight away. Fortunately, I felt it 'give' and managed to raise myself enough to prevent the insertion of the seat post where I didn't want it inserting!

Equally fortunately, I was at the summit of one of the big hills above Hebden Bridge at the time. I stopped to pick up the saddle, stuffed it in my back pocket, and then freewheeled down the hill to home.
 
Shop I worked in sold a Syncros carbon post to a chap which suffered such a failure - nurses had to pull shards of carbon shrapnel out of his bum.

It made him quite unhappy.

Maybe a torque wrench would help avoid this scenario?
I'd definitely overtightened the bolt. The saddle had come loose on the previous ride and I went a bit mad with a big spanner when I tightened the bolt - I won't make that mistake again!
