Another option would be to grind the stops on the freehub back a bit with a file or dremel

That would depend on the wheelset. Mine has plenty of clearance, but obviously worth checking.

Can't you simply measure the freehubs?

On fulcrums for example it says on the hub whether it's 11 speed compatible...worth a look

Could you borrow (or buy cheap) an 11 speed cassette to try on the old wheels to see if they will take it?

Not gonna weigh in with my opinion on the wheels coz I haven't got one.
You won't regret the 105 group tho. .....it's great
