Which turbo trainer?

I have lots of queries about turbos as I have never owned one!

I definitely want a quiet one, although it doesn't have to be totally silent. I want to be able to monitor speed and/or power in a meaningful/reliable way. Do they come with a monitor? I don't understand how the resistance levels work; can't you just shift the gears to alter speed? Is it possible to ride out of the saddle, and once you start pedalling, is it liked riding fixed? Would I need a mat, and if so why?

ive got a cycle ops 2 fluid trainer been pleased with it so far, there very good i believe if you have any prpbs and will replace parts if necessary not that ive needed to. as for monitoring i use my garmin edge hope that helps
