what if any are the advantages of the 40mm deep rims on a 700 wheelset ?

They're more Aero than 35mm deep rims.

I have two bikes, one with 50mm wheels the others are standard size rims. all my best times have been with the aero wheels, Have ridden in the spanish mountains on both sets, Have never noticed any difference on any climb, but a noticable difference on the flat and going down hill, especially if you are following someones wheel.

They look nice, and are directionally aero, but not so good in a gusty cross wind

That's a matter of opinion. Personally I really detest the looks of aero wheels and aero bikes in general. Fugly.

I dont think the weight is a big issue for me tbh , I would like to think that Road CC have given a fair aporaisal of these wheels , 'taking a knock' as they put it is a major consideration
