Disregarding the essentials (bike, shoes, bibs, etc), I'd say my Garmin Edge 305.

Kit wise, I'd have to say my gilet is an unassuming hero.

Swiss army knife - I've had it since 1979 ( bought it in a gift shop in Barmouth as a teen ), and I've carried it in my rucksack on every hike I've been on - and I've been on quite a few in my time - Its the first item of kit I check is in my pack before I set out . . . . since I got the bike It also sits in my pack on every ride . . . . .

As a sunshade.

Soak it in a stream in hot weather and replace on head. Feels great.

Under helmet in wet 'cross races.

Backwards on head for time-trialling.

When honking up a long climb I like to assume the old school climber look by flipping the peak up and sticking my tongue out of the corner of my mouth.

When going up a climb and your legs feel like shoot pull the peak right down so you can only see a few feet in front of your wheel. It feels easier if you can't see what's up ahead (although there's a greater risk of hitting a sheep. Or a dead badger)

There's other stuff you can do with them too, the climbing one is the best one though.

the usual, spare tube, pump, top peak mini tool, strong metal tyre levers. Hope 1 up front and a Mars 3 on the back.

Slightly off topic perhaps, but the single best thing I ever bought for my bike has to be mudguards. I know they look shoot, but I commute to work, and I think it's added another year's life to my winter jersey.

The only really non-cycling related essential doo-dad is my blackberry, cell phone for emergencies, music streaming through Pandora, camera for interesting stuff on the way and gps tracking through EveryTrail. The multi tool, pump and spare tyre I see as just other parts of the bike.
