Viscosity of rear hub/freewheel

My rear axle turns smoothly in the hub, but the grease appears to be much more viscose than the front hub

There is also more resistance than my other bike when roatating the cassette on the freehub by hand with the wheel off.

I can't see anything binding or feel anything. It's smooth, just a bit stiff.

Normal or worth a strip down?

only you can make that call, I'm afraid.

Diagnosis over t'internet doesn't go as far as assessing viscosity AFAIK. What I can tell you is the freewheel pawls will feel a great deal better with some regular attention; a light machine oil or very light grease is usually the trick. Might as well strip down and clean/regrease the hub whilst you're there.

Note: usually this is not a complex job, but it can be turned into one if you don't know the arcane arts. Asking the LBS to do it and show you how is a good idea.
