Upgrading wheels; spending something around £600-£800 or so. Suggestions?

Hi all,
I'm looking to upgrade my wheels on my summer bike from Fulcrum Racing 800's that came as standard.

I have disc brakes and generally run 25-28mm tyres. My riding is generally on the flat, but with the odd hill thrown in so I'd like wheels that are suited to both. I have been looking at some of the Hunt Wheels namely the 44 Aerodynamicist at £809 (1466g, currently discounted from £1079) or the Hunt 54 Aerodynamicist's at £824(1524g reduced from £1099)

I have done the odd race but not super-serious although I'm open into getting into it.

I then looked at things such as ZIPP 303's for £891.

Naturally, when I shared my thoughts on Reddit, I was jumped on with the whole 'buy better for cheaper from China'. Also 'Absolutely don't buy Hunt; they're rebranded Chinese wheels, but with a huge mark-up'. Typical, huh.

I did have a browse and found a Chinese brand called Superteam, reviews seem positive on youtube, to be honest. The ones I leaned towards were S-ALL Carbon Evo D28-50's, at $999 (so, £800 or so?)

Please guide me!! I'm open to looking into other brands as I'm not at all set on any of these options.

I'm not fussed at all by losing an extra 100grams. I take 2 bottles of water at 500ml each. If I want to save 100g, rather than spending an extra £300 I'll just drink faster :laugh:

Personally, whenever I need new wheels I build my own, and if you have any curiosity along those lines I'd recommend it. Get yourself a copy of Jobst Brandt's "The Bicycle Wheel" and have at it!

If that's not your vibe, also consider wheels handbuilt by somebody else. You can choose components yourself, and you have a better vector for servicing and maintenance than with factory wheels. I've heard good things about DCR wheels in Lewes, for instance:
