ultegra 10 speed brakes on a giant 9 speed defy

guys managed to get a hold of a set of ultegra 10 speed brakes,was wondering if i could replace the sora brakes on a 9 speed giant defy with the ultegra brakes,in my head it says ok but just need it clarified thanks.
 
Yes you can. The Ultegra calipers will work fine with your current levers.

The 10 speed in the title is just to relate them and group them with a particular groupset, brakes are "speed independant". You can use pretty much any road brake with any road lever

Some exceptions for example using campag brake with SRAM or Shimano levers, you can do it, but SRAM and Shimano have the cable release for creating enough slack to remove a wheel at the caliper end, Campag has it at the lever end, so to get your wheel out on a Shimano/SRAM Lever-Campag Brake setup you would need to undo the allen bolt holding the cable. However, a Shimano/SRAM brake and a campag lever, gives you masses of cable slack as you have 2 releases, lol.

- or you just let the air out of the tyre. My 1992 Peugeot 525 Comp came with Shimano Exage brakes with no QRs - but with the 20mm tyres ftted as original equipment you didnt need them! (It was a PITA when I later fitted 23mm's).
