how much performance improvements will i see from my 37mm knobbly tyres to my 28mm gators.......on 30mile round trip commute i'm getting an average speed of 11.7mph - would it get me upto a 13/14mph average by changing to the quicker, narrower tyres

It's hard to give an exact answer, so I'll just tell you what my experience was:
About 3 months ago i was commuting just under 7 miles each way, uphill into the wind in the morning, downhill and with the wind on the way back. I was on hardtail mountain bike with wide slick tires. I got a road bike over Christmas, so i didn't need the mountain bike to commute on regularly anymore, so the nobly tires went back on. When i do use it to commute occasionally, I'd say it's about 3-4 mins slower in the morning, maybe 2-3 coming back. It used to take me about 30 mins in the morning, and 22ish in the evening.

I should add that the tires are lower pressure on the nobblies than the slicks i was using, so that probably makes a difference too.

I would pretty confidently say yes to your target and hazard a guess that you would average around 15/16 mph
There is no science behind my answer, just my own experience of converting mtb's to commuters or tourers
The fact that you are averaging 11.7 with those tyres over 15 miles is quite impressive
I recently put a carbon cross fork on my Marin Sausalito hybrid ( had a suspension unit ) and changed the tyres from some semi knobbly 32's to 28 gatorskins and I,m 3 cogs up on the rear cassette for what seems like the same effort.. averaging about 16mph on app 20 mile cyclepath routes
 
I'd also yes, but again with no science behind it. Just console yourself with the fact you will inevitably see an iprovement just from vastly improved rolling resistance, the rest is down to you................
