How true should the bike wheels be? I notice that my rear wheel is off by maybe a few milli-meter, is this something to worry about?

The answer is as true as possible. However I would tweak it if lateral runout is more than two millimeters.

The most likely problem you'll notice is 'lumpy' braking.
Funnily enough, just started using the hybrid for winter commuting...and see its rear is out of true :sad:
Tweeked it a bit today and instead of one moderately long section out of true, now ive got two short sections...albeit better to look at, but i'm really noticing it when braking.
I'll be having another play tomorrow.
 
It's a fairly easy fix - get a decent spoke key, mark the area where the wheel is out, and tighten the nipple(s) in that area (on the slack side only) by turning anti-clockwise and this will draw the rim back into position.

Just use a quarter turn of the nipple to do this - so it's only a slight adjustment.

If the wheel is still out slightly in the direction it was originally then loosen the nipples in the same area (but this time the spokes connecting to the other side of the hub) by 1/8th of a turn clockwise. This has the same effect as tightening up the spokes on the other side by letting the rim drift back into alignment.

with decent rims and brass nipples you can get to about 0.2mm but not really any better than that.

However most people are happy if it doesn't exceed 1mm, and cheaper rims are difficult to get better than 1-2mm anyway.

a few millimetre???

if you have rim brakes then you will get "pulsing" when you brake or even brake rub if really far out (not a problem with these new gangled disc brakes). also you may feel wooble when riding too but those are extreme cases.

Not being a wheelbuilder, I can true up my wheels to well under 0.5 mm ... it just takes time.
