Too small ? I Understand CX to be bigger than roadies and I normally ride a 58cm

Would a longer and higher stem help

I'd have thougt too small Gaz TBH. Yes you could extend it via the stem and post, but the frame will still probably always look too small.

The Focus Mares I have is the same size as my Focus raod bike was and it's bang on, certainly doesn't feel any bigger

Im 6ft and ride a 56cm Secteur and a 56 tricross.

I would say the tricross is a bit bigger than the secteur, I had to change the 110 stem for a 90 or I was too stretched out. While this size is fine for me on the road, if I were to go much further off road than light trails or tow paths I would want the next size down so I could man-handle it around easier.
So for you I would say that if you intend to off-road it then a 56 might be OK, but probably too small if it will mainly be on the road.

As always the usual disclaimer, best to try the fit for yourself.
