Any idea on where you may want to go?
 
All of the SW corner is top cycle-touring country: peninsulars of Cork, the Burren in Co Clare, (Karst landscape), cliffs of Moher, Arran Isles, Connemara. There are lots of independent hostels, some basic, some excellent, in useful locations.

Get a copy of the Michelin map of Ireland from WHSmiths, ISBN 978-2-06-719258-4.
For £2.50 you can't go wrong and it shows roads that aren't shown on larger maps. Have a gander at the Discovery Series of maps that cover Ireland.

I thought the Burren was stunning and one of the highlights of my trip. Plus you can find the Father Ted house there.

Also don't overlook northern Ireland. The Antrim coast is stunning. Plus you don't need funny money.

Don't try to camp in March. I looked into riding the East Coast up to Belfast this year but everywhere seemed to be shut.

From where you are Starting and finishing at Belfast would seem easier than getting to Dublin

the Ring of Kerry is nice scenery but a main route for tour buses and car tourism. Smaller peninsulars have much better cycling. ROK does have a nice route across.
Supposed to be making it a one way system, for the main holiday season.
Complaints from coach companies over safety on the often narrow roads.
