Years ago when I was much shorter and lighter I purchased my first road bike from my local bike shop. I made it into my daily commuter and used and abused the freedom it gave me. I find myself now trying to reignite my love for the road. But I am stuck trying to get the right bike for my weight and height not just picking the first one that catches my eye. I'm 6"7 and weight roughly 215 pounds can anyone please help give me some information on what measurements matter and how to choose my next set of wheels.

If you Google "bike sizing guide" or similar, you will get loads of stuff. Here's one..

Personally, I would always ride the particular model before buying.

Your weight will not be a problem.

As for your height ... you will need the biggest frame that most companies make, say 63 cm, and a long stem and seatpost too! Get somebody who knows what they are doing to help you get your bike fit right.
