IIRC you need to open the main lever covers of the units (with a phillips screwdriver) in this diagram to extract the old gear cables. The important thing is to release the shifter drum fully by pulling the release (small) lever a number of times before installing new cables, which is otherwise the reverse of extracting the old. You can test that everything works before closing the cover by pulling the gear cable with your hand while operating the shift levers.

As far as the brake cables are concerned, the old can be extracted and the new installed easily enough by just pulling the brake levers back far enough so that the slotted socket for the cable's barrel head is exposed, and the slots of the adjuster bolt and nut are aligned to the gap in the body.

FWIW since they are so cheap and could make such a big difference to smooth operation I usually change the cable housing at the same time as the inner.

Did mine a while ago Geo, it wasn't hard.
IIRC the top cover screws are phillips head, you want quite a small phillips s/driver.
To extract the gear cable, undo it at the derailleur end, then (again IIRC) push the cable into the shifters a bit, you'll see the nipple on the end of the cable, inside the shifter. 'Tickle' it out of its location with a small pointy thing then pull the entire cable out. It may just come out anyway, mine was a bit tight.
Reverse procedure to install new inner cable, just make sure the nipples located properly.
