Mini vs 'stop' well enough when properly adjusted.. maybe just to go to softer compound pads and be prepared to shell out for new sets every few months

Any particular pads you would recomend? I could do with quite a lot more stopping power. I've adjusted the brakes and they're ok but when I cycled around Arran over the bank holiday with my panniers on the bike didn't quite feel safe enough doing down hill!

I have just used the standard Tektro pads and have good use out of them but I am looking also to replace soon with poss

where you braking with the suicide leavers rather then the drop levers?
Suicide leavers wont give near the same amount of braking power as the drops.

Just bumping this one up to see if anyone could recomend any brakes as well as the pads?

I'd like some extra stopping power from my rear break on my tricross as well, im not 100% confident with the stopping power of the standard ones on it.... would be interesting to know what pads you went for and weather they helped at all?

Tektro 720 cantis - if you can find a pair (I got mine from Paul Hewitt in Leyland, my lbs). Even with cheap road pads they have the stopping power of a well-aimed halfbrick, to misquote Terry Pratchett.

Whilst I've no doubt that the stock brakes can be improved on, I'm just wondering why you only mention the rear brake - 80%+ of your braking is best done with the front brake as it's so much more powerful and easily controlled with your dominant hand (presuming!). Back brake is more for steeper/longer descents and emergency stops.
