sora to a shimano 105

I had a mix of 105 and Sora on mine and have gone to 105 when I've needed to change anything - the only thing I felt necessary to swap before it needed it was the STI Brake/Gear levers to get the 'proper' lever instead of the silly 'tab' on the side that Sora has.

Generally apart from that I haven't noticed a huge difference in performance...

+1 (unless you only ever change down while on the hoods).
 
When I first got sora lever I thought great they are similar in operation to the campy but now I've had them while I dis like them. With the campy I can change easily on the drops but with the stupid sora levers I can't. I'd definitely go for the upgrade when they wear out.

I recently (about 7 months ago) upgraded from Tiagra to 105 and definitely noticed the difference. The changes are smoother and more precise. I would certainly recommend 105. In addition and IMO, the difference to Ultegra is smaller as I have this on my good bike.

It's possible that some of the perceived effect from trading up is just that you're eplacing old kit with new. I recently replaced some worn out tiagra with new tiagra and it feels like a new bike
