I'm using a 53tx38t with an 8 spd cassette 12t-28t and 105 short cage 10spd rear mech
It is changing without problem but I reckon I must be about on the limit.
Usually about 30 teeth. Check the manufacturers specs on the net. If it's shimano then check the biggest sprocket the mech will cope with too. Manufacturers tend to be a bit conservative with these so you can often get away with a bit more if you want to take the risk.
26 total tooth difference is the official line from Shi**no, which gives you the option of 12-24 or 11-23. I think you'll have no problems with 12-27 though with a tweak of the b-adjust.
no it will work fine. I have sora 8 speed on my winter hack with 10 spd 105 shortcage rear mech and it works fine with both my rear wheels one of which has 12-27 shimano and the other 12-28 campag both 8 speed
