Daft question, i know i have 700 * 23 presta, but i didn't know the presta comes in differing sizes?

What will i need with the R510s?

The sizes refer to the length of the valve stem, so you need to measure the depth of your rim and buy accordingly. The long ones are for use with deeper rims.

If my options are either :

a) Presta
b) Presta 60mm

I'm guessing i'd need a, since i dont have aero wheels.....

They some in lots of different lengths, so option a) is meaningless to me. You need to know how long it is so you can tell if there will be enough sticking through the rim to get your pump on securely.

As a very general rule of thumb if its unspecified length i take it to be about 40mm, so thT will be ok to use with standard depths but anything aero might not leave much showing.

40mm will be fine for standard R501's, if they are 501 30s you probably need a longer valve. You can always use a longer valve in a slimmer rim, (though it might look a bit sillly ^_^) but not vice versa.

- also find long valve tubes are a real PITA to get on the rim - valve through the hole - especially in the event of an unplanned tyre deflation issue while out on the road.
