I have a couple of 11 speed Shimano chains in my box unused, but I now have upgraded to 12 speed on the various bikes. The 11 speed chain that I have in stock seemed to suggest looking at the symbols that they are for mountain bike rather than road. See attached photographs. Basically the question is can I use the 12 speed ones that I've got on a road bike with 105DI2?

Additionally, will that 12 speed chain be OK on a Sram 12 speed 1x 12 gravel bike

(Unless someone can give a very good reason why I am wrong...) Yes and yes!

I use Shimano and SRAM chains on all of my bikes without even looking at those symbols. I just make sure that I use 11 speed, 10 speed, or 9 speed as appropriate.

I'm not 100% but sram 1 x 12 axs is supposedly flattop only. Not sure if compatible with others. As to shimano x11 I've always used it on both mtb and road, tbh though I tend to use kmc as cheaper.
