I put the Tiagra 12-30 4600 cassette on my Ultegra triple 6700 (long cage) for a while and it worked fine. I didn't have to alter the chain length and there was plenty of clearance between cassette and jockey wheels. I think the Shimano spec is a little conservative with what you can get away with.

If I understand correctly you have a triple groupset already? and want to go to a "bigger" cassette ?
1 .... ignore any suggestion that you need to MTFU, there will always be at least one who says you don't need it. If you want gears with that wide a range I'd say go for it.
2. if you have a triple then the mech will be a "GS" model (medium cage actually - not long cage) anyway, so no issues there, as rb58 says, Shimano specs are conservative. Chances are you might even get away with an Apex 11-32 cassette.
3 Put it all together, make sure your limit screws are set correctly, and CHECK the chain length before you ride it.
I went from a 12-27 to a 12-30 and needed an extra link. I didn't find that out until I inadvertently went to big ring/big sprocket and completely locked the drive train.

guys thanks for the replies,I have not bought the groupset yet and looking between 105 and ultegra 10speed triple
I got away putting a mtb rear derailler,11-32 cassettte and sram 971 114 link chain on the wife bike (9 speed) but i know it is a little different for 10 speed.I understand about some people saying you dont need that high a gear but it is a light weight tourer and touring brings with it very steep hills.

HNi Pete thanks for posting,I had looked at spa cycles for lower chainsets, but then looked at ribble groupsets. To buy the individual parts like sti shifters etc I thought going the spa route would work out expensive, any more help appreciated to get sorted
I would prefer the 48/38/28 on stronglight but seems it is unavailable at the moment
