Hi, apologies if this has been asked before...
I need to replace the rear disc hub of my Whyte Charing Cross cyclocross bike. Can I use a mtb hub like the Shimano Deore or XT laced into the Whyte rim? Would that work?

The important measurement is the over lock nut distance, OLD, most MTB's are 135mm, but road are 130mm.

Best to check with the shop that sold you the bike what size you need.

Very true but some wheel builders will cut the 2.5mm on each side to make it fit on a 130mm dropouts - this is a trick that is popular with touring cyclists so they can use Shimano Deore hubs.
