I want to plan a route on Garmin connect and use my Garmin edge to follow it, it's going to be a road ride, how do I record my ride and follow a course at the same time? The thought of not logging a ride gives me nightmares

You just follow a line, I tried it for 91 miles and it was fine and even told me when I took a wrong turning.

As far as I am concerned I have no reason to buy an 800 as this does the job.

If you ever need to put a .gpx file on it just connect it to your pc then look for it under 'My Computer' and put the file in the New Files folder which is in the Garmin folder and it will do the conversion for you.

I have no idea what it would be like off road.

Use a mapping site to plot a ride, (Bike Hike is my mapper of choice). Save as a gpx or tcx file on to your computer. With the 200 connected to your computer. Drag and drop the file into the 200's new file folder and it will convert to a route to follow.

To follow the route. Find route, select route/course, press start and away you go and it will record your journey.

It does take a little while to get used to the breadcrumb trail you follow. You have to be especially aware of junctions and roundabouts. But as Phil said also, it will tell you if your are off route.
