What would i gain by changing the rear derailleur from a shimano 2300 to a shimano 105?

i've already changed the cassette and new wheels - still hasnt been ridden yet as i am recovering from knee surgery - so thought if i changed the rear derailleur to all that would be needed to changed then was the chainset to a 105 in the future.

TBH I wouldn't bother until / unless the current mech keels over. Even cheap Shimano stuff shifts fairly decently. 8 speed Sora (pretty much what 2300 is) got me up and down Ventoux with no drama.
