Raw veg!

You can eat most veg raw. Salad veg doesn't really need an introduction. There's whole "cook" books on it. Wash the food well, even if you grow your own. Mushrooms might be a concern but I've never done them raw so haven't looked to see if there's a genuine concern. We've boiled the odd critter in our brocolli before by mistake by not washing it properly. Those who do it claim it's better for you and I haven't found anything to disagree with this with the exception of tomatoes. You peaked my interest now. Might just invest. In a raw food book :-)

Any root veg a bit grim raw - have you tried getting through raw Swede with a knife, let alone teeth! They do say you shouldn't eat frozen peas though for some reason?

Raw mushrooms are ok, especially in a salad, just wash them- not technically a vegetable though :laugh:

I eat frozen peas still frozen. Can't see any reason why not. Don't use frozen often though.

Carrots are good raw if the quality's good. Either grated or like a chocolate bar.

Brussels Sprouts are tasty raw - but you may be lacking friends afterwards.

Kidney beans are poisonous when raw so don't try them.

Most vegetables are less digestible raw, and AFAIK our digestive systems can't get at the nutrients as well as when lightly cooked.

I suppose so. You'd have to eat more than a double ice cream's worth for the cold to do it though (new unit of measurement there).

I eat peas raw if I'm shelling them too. They do produce a gaseous result so could say they upset my tum - not to mention other peoples olefactory sensors!

You can eat most vegetables raw which is safe but there are some which you must be careful of as they can make you ill. The ones that spring to mind which are a no no are marrows, pumpkin, courgettes, guages and aubergines as these all contain a toxin and can only be neuteralised while cooking and adding salt while cooking helps the process. I dont' know every veg which is good and bad to eat raw but I blend cabbage, collie, carrots, peppers, peas, potato, brocolli and sprouts ok in a veg smoothie. Tastes different but I find it does me good and I have got used to the taste.

With potato avoid any with a green tint as it has to be cut out because it wont cook properly and avoid eating half cooked potato as well other than that ok raw.

I eat courgettes raw! Well, strictly, I eat slices of courgette raw when I am cutting them up to cook them. I've never had any problem with that, and according to this article, it's okay.

I supose I went over the top by saying a "no no". As far as I am aware what I have read is "be careful of aqueous vegetables" including the ones I mentioned especially aubergines, they can give you a stomach upset eaten raw. There seems to be scattered about in books and on the internet conflicting views in what you can and cannot eat regards raw veg and the like. I must admit I get a stomach discomfort if I eat cucumber or courgette for some reason but I can eat potato raw with no problems[minus skin]. I could not live on raw food alone, it would do my head in and some veg is better cooked to get the benefit from it. I like to try new things and I am experimenting with raw veg in salads and smoothies for my lunch [only] and have found some benefit from changing my eating habits and is less boring than eating sandwiches all the time!
