one is ample. have no clue how you decide which one is ample* though. i bought one of each. money to burn. tbh i could do with swapping them because as it is it can be a bit tricky to adjust the rear brake cable as things stand

take care though... iirc they don't include the nut and bolt you need to join the roundstay to the main rack strut. stainless allen bolt, probably a bottle cage bolt, and nyloc does the job on mine.

*as in, rode from home to oxford, and all over west wales, with two full ortleib back rollers and a rack pack, and nothing bent, broke or fell off. commute with pannier four days a week, no problems.

a quick stare at my frame reveals you couldn't put a pair of roundstays on if you wanted to, they'd crossover each other...

I would check how this works before buying as something is not quite right here

The Tubus Fly as a clamp on the rack into which the stay fitting slides and is secured (Instructions can be downloaded here)

These fittings have bolts at either end, so would not fit.

Unless the rod retracts and these fit on to the end of the rod, I don't understand how they fit.

precisely.

iirc Bolt No. 10 is the one which is NOT long enough to join a roundstay to part No. 2 and still get a good lock on nut No. 6. Fine if you are just going with the bent metal plate No. 12 but otherwise it goes in the spares box.

Will see if I can take a snap of the Tubus Fly on my Surosa and upload it.

That is the same as the one I linked to, and it is not clear

I would have thought that if you bolted the new stays through the original fixing eye it would introduce a "joint" that if not maintained could drop the rack downwards under load.

There is certainly a joint between the roundstay and the strut. But this elongated joined strut really only governs fore and aft movement of the rack, and, to a lesser degree, the horizontal"ness" of the rack top.

In practice it works fine, and is how Tubus designed it. I think key to this is that a Fly is a light load rack, if you're sticking a tent and camping gear and two panniers on it you've probably bought the wrong rack.
