Old old bike brakes

Hi,
I know this is a very basic question but I was wondering if someone could help.....

I've just bought a really old road bike, it's in a sorry state but first thing first, new brake pads - I've currently got these in:

but can't work out what I need to buy. I'd like to remove the metal holder if possible as, although this one looks ok - the others are a bit bent - if this isn't possible I'll get new blocks only but I can't work out what I need.

Any modern brake pad should fit.

It looks like you have chrome rims which will make most pads inoperative in the wet. The consensus on the best pads for chrome rims seems to be Coolstop Salmon, unless someone knows any better option.

Thanks so much guys - really appreciate this. Having a look at the rest of the bike, seems like the brakes may the first part of a long journey!

While I put in an order I'm also looking at replacing brake and gear cables - didn't realise that there would be so many options - the gears are apparently Huret which I understand from a few forms makes it tricky to find cables. I don't fully understand the issue but does anyone know if this means a standard universal gear cable would not be suitable?

Same gear cables as today, but just got to check the seating of the cables at the lever ends. The blob on the end can be round or a block or something. Just look out for the same as the old cables. If you get the wrong sort, it could still work, but won't be quite as flush with the lever.
