I have never done them before and there are soooo many suggestions/methods out there.
I used 6 good sized pork ribs.
Garlic and onion
Carrot and celery
Red wine
Stock
Bit of Paprika and a bit of Rosemary
Now on a low heat for 6** ?? hours
**depends who you listen to.

These are not part of a full meal, we just want to pick them up and chomp......like you do with ribs from a Chinese takeaway.

Sounds good. I've done them in the past - pretty sure they were falling apart after a couple of hours so you might not need 6, although mine were racks of spare ribs, so smaller.

I then finished them under the grill with a bit of sticky glaze and used a lot more spices & less veg that you have, just a different style.

Slow cooker them with BBQ sauce. Fabulous. Even better, slow cooker then finish off on a BBQ. Went down a storm last year at a family BBQ (when we were allowed outside).
