Chain has just snapped on the way home, can I just insert a new 'missing link' or whatever they're called? That would mean two missing links on one chain - is that ok?

Absolutely fine to have more than one link - but if your chain snapped it is probably getting to the point where you should replace it either because it's badly worn, or because it's a crap chain.
