Looking for a touring bike around £300

Hi,
I haven't been cycling long and currently own a mountain bike. However, over the summer I plan to go touring (not too sure where yet) and really dont fancy lugging around on my MTB.

I dont plan on pushing myself too hard and therefore wont be covering too large distances (possibly maximum 50-60 miles a day). As i am quite new to this i was wondering if anyone could point me in the direction of a tourer around the £300 mark (being a student my budget isnt great), first or second hand? Also, is it possible to adapt a racer for touring use?
