I'm going to change my chain today and had a look for some info on best practices. I found a vid that says when on the large front and smallest rear sprockets the jockey wheels and CL of cassette should fall in line.

I looked at mine, the top jockey falls forward of the cassette CL and the bottom to the rear of it. If this theory above is true does my chain need to be lengthend or shortened ? I'm running Ultegra 50/34 x 11/28 if this makes any difference.

Unless you are having shifting issues just adjust the new chain to the same length as the old one, whack it on and ride, simple as that

SRAM suggest wrapping the chain around large chain ring and large cog (not through the rear mech) then adding 2 links. Not sure if this will work with other brands but works fine on their kit. If you are just replacing an old chain and not changing cassette or chainring sizes, make the new chain the same number of links as the old chain.

That's fine as long as the old chain is the right length. You could check by using chain length calculator.
