Jockey wheels

Can you still get jockey wheels for an 8 speed Chorus mech?
Could I use 9 speed instead?

I imagine so, the last set I bought had a set of alternate width spacer thingies - I guess to ensure compatability with different widths of mech. Sorry forget the make and it was about a year ago I bought them (tho only used them 3 weeks ago)

Tacx do some that come with a variety of spacers for different mechs.

Just got some Tacx for my MTB, and they do indeed suit many mechs - 10 and 11 tooth versions, so read what the pack says.
