Jockey wheel replacement (little lost)

My jockey wheels on my Shimano 105 need replacing - iv noticed they have 11 teeth.

Annoyingly Im not sure what speed my bike is, but will all 11 teeth Jockey wheels be a good replacement?

Yes any 11 tooth will do.

It's a good chance to add a little bling to your bike.

It's a bit like buying pedals. You buy them as a pair, they are the same size , but one will be labelled left and right.
With jockey wheels one will be labelled top and bottom, they do slightly different things, the top one has a bit of play to help it align with the cogs as you shift.
